Mixed Vegetable Sambar - Typical south indian style
This is the typical sambar a south indian person makes in their home
Ingredients:
Mixed Vegetables like potato, onion, peas, beans, carrot etc. Vegetables of your choice
Mixed vegetables - 2 cups
Tuvar Dal - 3/4th cup
Ground nut - 1/4 cup
Onion - 1 number - Cut into cubes or slices
To fry lightly in oil and grind
Urad dal - 2 tbsp
Channa dal - 2 tbsp
Coriander seeds - 3 tbsp
pepper corns - 3 tsp
methi - 1/2 tsp
cinnamon stick - 1/2 inch pc
red chillies - as per your taste
coconut - 1/2 cup
For garnishing
Oil - 1 tsp
mustard seeds - 2 tsp
curry leaves - a few sprigs
asafoetida - 2 pinches
Method:
Please cook the vegetables (except onion) in a pressure cook. Also cook tuvar dal and groundnuts together in the pressure cooker. Vegetables and dal in seperate containers. You can add some salt to the vegetables before putting it into the pressure cooker so that vegetables will taste good after being cooked. Once it is cooked, please keep it aside
Meanwhile take a pan and fry all the ingredients under to grind column till they turn brown. Add coconut and grind it once they have cooled down.
Take a vessel, and add the garnishing items. Then add onion and fry it till it turns pink. Then add the vegetables, and dal, and the ground masala and mix. Boil it for 5 minutes.
It is then ready to be served with Rice, millets, brown rice and even with chapatis.
