Eerulli Soppina Pulav
Ingredients:
- 1 bunch Eerulli Soppu (Spring Onion)
- 2-3 types of veggies cut into cubes or 2-inch pieces (e.g., beans, carrot, potato)
- 1/2 teaspoon Lemon Juice
- 2-3 Peppercorns
- 1 small Tomato, chopped
- A small bunch of Coriander Leaves, chopped
- 2 Green Chillies, sliced (adjust to taste)
- 1 tablespoon Tomato Sauce
- 1 tablespoon Soya Sauce
- 1/2 teaspoon Pepper Powder
- 1 cup Rice (enough for 3 people)
- 2 tablespoons Oil
- Salt to taste
Instructions:
Prepare the Rice:
- Wash the raw rice thoroughly.
- In a thick-bottomed vessel, heat 1 tablespoon of oil over medium heat.
- Add the washed rice and fry for a couple of minutes.
- Add lemon juice, a pinch of pepper powder, and salt.
- Add water (usually double the amount of rice) and cook the rice until it's done but still slightly separated. Set aside.
Prepare the Vegetables:
- Cut the Eerulli Soppu (spring onion) into 1/2 inch pieces.
- Heat 1 tablespoon of oil in another vessel over medium heat.
- Add the sliced green chillies and fry slightly.
- Add the pre-cooked vegetables and stir-fry for a couple of minutes.
Combine Ingredients:
- Add the chopped tomatoes and coriander leaves to the vegetable mixture.
- Stir in the tomato sauce, soya sauce, and remaining pepper powder.
- Finally, add the cooked rice to the vegetable mixture and mix well to combine all the ingredients.
Serve:
- Serve hot with tomato raita or tomato sauce.
