Eerulli Soppina Pulav

 


Ingredients:

  • 1 bunch Eerulli Soppu (Spring Onion)
  • 2-3 types of veggies cut into cubes or 2-inch pieces (e.g., beans, carrot, potato)
  • 1/2 teaspoon Lemon Juice
  • 2-3 Peppercorns
  • 1 small Tomato, chopped
  • A small bunch of Coriander Leaves, chopped
  • 2 Green Chillies, sliced (adjust to taste)
  • 1 tablespoon Tomato Sauce
  • 1 tablespoon Soya Sauce
  • 1/2 teaspoon Pepper Powder
  • 1 cup Rice (enough for 3 people) 
  • 2 tablespoons Oil
  • Salt to taste

Instructions:

  1. Prepare the Rice:

    • Wash the raw rice thoroughly.
    • In a thick-bottomed vessel, heat 1 tablespoon of oil over medium heat.
    • Add the washed rice and fry for a couple of minutes.
    • Add lemon juice, a pinch of pepper powder, and salt.
    • Add water (usually double the amount of rice) and cook the rice until it's done but still slightly separated. Set aside.
  2. Prepare the Vegetables:

    • Cut the Eerulli Soppu (spring onion) into 1/2 inch pieces.
    • Heat 1 tablespoon of oil in another vessel over medium heat.
    • Add the sliced green chillies and fry slightly.
    • Add the pre-cooked vegetables and stir-fry for a couple of minutes.
  3. Combine Ingredients:

    • Add the chopped tomatoes and coriander leaves to the vegetable mixture.
    • Stir in the tomato sauce, soya sauce, and remaining pepper powder.
    • Finally, add the cooked rice to the vegetable mixture and mix well to combine all the ingredients.
  4. Serve:

    • Serve hot with tomato raita or tomato sauce.
