Kolumbu

 

Ingredients:

  • For the Ground Masala:

    • 1/2 cup fresh Coconut
    • 1 tablespoon Dhaniya (Coriander Seeds)
    • 3-4 Red Chillies
    • 1 teaspoon Mustard Seeds
    • 1/2 teaspoon Turmeric Powder
  • For the Kolumbu:

    • Vegetables of your choice (potato, beans, cauliflower, Cabbage etc)
    • 1 cup Tuvar Dal (Pigeon Pea Lentils), cooked
    • Tamarind water 
    • Salt to taste
    • Fresh Coriander Leaves for garnish

Instructions:

  1. Prepare the Masala:

    • Grind the coconut, dhaniya, red chillies, mustard seeds, and turmeric into a smooth paste. Set aside.
  2. Cook the Vegetables:

    • Cook the vegetables of your choice until tender. If using peas, greens, or avarekalu, do not use tamarind.
  3. Combine and Simmer:

    • Add the cooked tuvar dal to the vegetables. 

    • Add the ground masala paste and tamarind water (if using).
    • Stir well and let the mixture simmer for about 15-20 minutes, allowing the flavors to meld together.
    • Add salt to taste.
  4. Serve:

    • Garnish with fresh coriander leaves.
    • Serve hot with rice or roti.
