Kolumbu
Ingredients:
For the Ground Masala:
- 1/2 cup fresh Coconut
- 1 tablespoon Dhaniya (Coriander Seeds)
- 3-4 Red Chillies
- 1 teaspoon Mustard Seeds
- 1/2 teaspoon Turmeric Powder
For the Kolumbu:
- Vegetables of your choice (potato, beans, cauliflower, Cabbage etc)
- 1 cup Tuvar Dal (Pigeon Pea Lentils), cooked
- Tamarind water
- Salt to taste
- Fresh Coriander Leaves for garnish
Instructions:
Prepare the Masala:
- Grind the coconut, dhaniya, red chillies, mustard seeds, and turmeric into a smooth paste. Set aside.
Cook the Vegetables:
- Cook the vegetables of your choice until tender. If using peas, greens, or avarekalu, do not use tamarind.
Combine and Simmer:
- Add the cooked tuvar dal to the vegetables.
- Add the ground masala paste and tamarind water (if using).
- Stir well and let the mixture simmer for about 15-20 minutes, allowing the flavors to meld together.
- Add salt to taste.
- Add the cooked tuvar dal to the vegetables.
Serve:
- Garnish with fresh coriander leaves.
- Serve hot with rice or roti.
