Fried Rice

 

Ingredients:

  • 2 cups Rice
  • Vegetables of your choice (beans, carrot, spring onion, onion, potato)
  • 1 Onion, sliced
  • Green chillies, as per taste
  • A small bunch of Coriander Leaves
  • 1/4 teaspoon Jeera (Cumin Seeds)
  • A small piece of Cinnamon
  • 1 Tej Patta (Bay Leaf)
  • 1 teaspoon Garam Masala
  • 1 teaspoon Dhaniya (Coriander) Powder
  • 2 Cloves
  • 1 Cardamom Pod
  • 1 teaspoon Ghee
  • Salt to taste
  • 1 tablespoon Oil
  • 1 tsp Amchur Powder
  • Optional: Cashews for garnish

Instructions:

  1. Prepare the Rice:

    • In a thick-bottomed vessel, heat 1 teaspoon of ghee over medium heat.
    • Fry the raw rice for a minute or two.
    • Add 1:2 water (2 cups of water for 1 cup of rice). Bring to a boil, then reduce the heat to a simmer and cover. Cook until the rice is done and water is absorbed. Set aside.
  2. Cook the Vegetables and Spices:

    • In another thick-bottomed vessel, heat 1 tablespoon of oil over medium heat.
    • Add the Tej Patta, Jeera, Cloves, Cardamom, and Cinnamon stick. Fry until light brown.
    • Add the Garam Masala, Dhaniya Powder, and Amchur Powder. Fry for another minute.
    • Add the vegetables and cook without adding extra water until they are tender.
  3. Combine Rice and Vegetables:

    • Add the cooked rice to the vegetable mixture.
    • Add salt to taste and mix well.
    • If using a pressure cooker, close the lid and cook based on the number of whistles your cooker needs.
    • If cooking in a vessel on the stove, once the water starts boiling, reduce the flame to low, cover the vessel, and cook until done.
  4. Final Touch:

    • Garnish with chopped coriander leaves and optionally cashews fried in ghee.
    • Serve hot.
