Pulao Recipe
Ingredients:
- Onion: 1 large
- Ginger: 1-inch piece
- Oil: As needed
- Bay Leaves: 2
- Jeera (Cumin Seeds): 1 tsp
- Cinnamon: 1-inch stick
- Lavang (Cloves): 2-3
- Green Chillies: 2-3 (adjust to taste)
- Mixed Vegetables: 1 cup (carrots, peas, beans, etc.)
- Salt: To taste
- Turmeric Powder: ½ tsp
- Chilli Powder: ½ tsp
- Garam Masala Powder: 1 tsp
- Rice: 1 cup
- Pudina (Mint Leaves): A handful, chopped
- Coriander Leaves: A handful, chopped
- Water: 2 cups
Instructions:
- Grind Masala: Grind onion and ginger to a fine paste.
- Sauté Spices: Heat oil in a pressure cooker, add bay leaves, jeera, cinnamon, lavang, and green chillies. Sauté until fragrant.
- Add Masala & Veggies: Add the ground onion-ginger paste and fry well. Add the mixed vegetables, salt, turmeric powder, chilli powder, and garam masala powder. Cook until the vegetables are slightly tender.
- Add Rice & Herbs: Add rice, pudina, and coriander leaves. Mix well.
- Cook: Add water (1:2 ratio with rice), cover, and cook for 2 whistles on medium heat.
- Serve: Once the pressure releases, fluff the pulao with a fork and serve hot.
