Brinjal Palya

 


A simple, mildly spiced stir fry that pairs beautifully with rasam rice.

🛒 Ingredients:

  • Brinjal

  • Mustard seeds

  • Green chillies

  • Curry leaves

  • Turmeric powder

  • Salt

  • Oil

  • Fresh grated coconut

 Method:

  1. Chop brinjal into small cubes.

  2. Heat oil and add mustard seeds.

  3. Once they splutter, add green chillies and curry leaves.

  4. Add chopped brinjal along with turmeric and salt.

  5. Cook covered until soft.

  6. Add fresh grated coconut and mix well.

 A Note from Tradition:

This was often made as a quick side dish when fresh vegetables were limited at home.
