Payasa (Kheer)

 

A comforting bowl of payasa (kheer) has always marked celebration — whether it was a birthday, festival or simply a good day.

🛒 Ingredients:

  • Vermicelli / Rice

  • Milk

  • Sugar

  • Cardamom powder

  • Cashews

  • Raisins

  • Ghee

 Method:

  1. Roast vermicelli in a little ghee until golden.

  2. Boil milk and add roasted vermicelli.

  3. Cook until soft.

  4. Add sugar and cardamom powder.

  5. Fry cashews and raisins in ghee and add to the payasa.

 A Note from Tradition:

Payasa was almost always the first sweet served at family functions in Karnataka households.
