Maddur Vada

 

 

Crispy on the outside, soft on the inside, and bursting with flavour — Maddur Vada is one of Karnataka’s most iconic tea-time snacks.

Originating from the town of Maddur (between Bangalore and Mysore), this savoury delight was often packed for train journeys or served to guests with hot filter coffee. Unlike medu vada, this one is flat, crunchy and incredibly addictive.

🛒 Ingredients:

  • Rice flour

  • Rava (Sooji)

  • Maida

  • Finely chopped onions

  • Green chillies

  • Curry leaves

  • Fresh coriander leaves

  • Cumin seeds

  • Salt

  • Hot oil

  • Water

  • Oil for deep frying

 Method:

  1. In a mixing bowl, combine:

    • Rice flour

    • Rava

    • Maida

    • Chopped onions

    • Green chillies

    • Curry leaves

    • Coriander leaves

    • Cumin seeds

    • Salt

  2. Add a few teaspoons of hot oil to the mixture and mix well.

  3. Add water gradually to form a soft dough.

  4. Take small portions of the dough and flatten them gently into discs.

  5. Heat oil in a deep pan.

  6. Fry the flattened vadas on medium flame until golden brown and crisp on both sides.

  7. Remove and drain excess oil on a paper towel.

 Serving Suggestion:

Serve hot with:

  • Coconut chutney

  • Tomato chutney

  • And a cup of strong filter coffee

Maddur Vada was often made during family gatherings or festive evenings — its unique blend of flours giving it a distinct texture that’s both crisp and chewy.
