Sambar Powder
🛒 Ingredients:

Coriander seeds

Dry red chillies
-
Chana dal
-
Urad dal
-
Fenugreek seeds
-
Cumin seeds
-
Curry leaves
-
A pinch of asafoetida
Method:

Dry roast coriander seeds until aromatic.

Roast chana dal, urad dal and fenugreek seeds separately until golden.

Roast cumin seeds lightly.

Fry dry red chillies with a few drops of oil.

Roast curry leaves until crisp.

Allow all ingredients to cool completely.

Add asafoetida and grind into a fine powder.

Store in an airtight container.
💛 A Note from Tradition:
Homemade sambar powder was often prepared in bulk and stored for daily cooking — giving every batch of sambar its signature flavour.
