Mysore Style Potato Palya
A must-have filling for dosas and a comforting side for chapatis — this mildly spiced potato palya is a household favourite.
🛒 Ingredients:

Boiled potatoes

Onions
-
Green chillies
-
Mustard seeds

Curry leaves

Turmeric powder

Salt
-
Oil
-
Coriander leaves
Method:

Heat oil in a pan and add mustard seeds.

Once they splutter, add chopped onions, green chillies and curry leaves.

Sauté until onions turn soft.

Add turmeric powder and salt.

Add mashed boiled potatoes and mix well.

Garnish with coriander leaves.
A Note from Tradition:
Often prepared early in the morning as dosa filling for school tiffin boxes.
