Vangi Bath (Brinjal Rice)
A festive rice preparation made using homemade vangi bath powder.
🛒 Ingredients:

Cooked rice

Chopped brinjal
-
Vangi bath powder
-
Tamarind extract

Mustard seeds
-
Curry leaves
-
Peanuts
-
Oil
-
Salt
Method:

Heat oil and add mustard seeds and peanuts.

Add curry leaves and chopped brinjal.

Cook until soft.

Add tamarind extract and cook briefly.

Add vangi bath powder and salt.

Mix in cooked rice and cook for a few minutes.

Often served during festive gatherings with raita and papad.
